Aloo Dum

You will need these ingredients:

Baby Potatoes - 500 gms
Water - 1/2 cup
Oil - 1 tbsp
Meat Masala - 3 tbsps
Tomato Puree - 1 pack
Cumin Seeds - 1 tsp
Ginger paste - 1 tsp
Green Chillies - 3
Salt - to taste
Coriander leaves - few sprigs for garnish

Method:
1. Wash the potatoes and boil them until cooked. Peel the Potatoes and set aside.
2. Heat oil and crackle the cumin seeds.
3. Lower the flame and add in the tomato puree. Keep stirring the mixture until the oil separates from the gravy.
4. Add the ginger paste and cook until the raw smell of the ginger goes away.
5. Add the green chillies and the meat masala. Cook until a nice fried smell emanates from the masala.
6. Add the water and the salt and stir until the gravy starts boiling.
7. Add the potatoes and mix until all the potatoes are covered with gravy.
8. Cook this until most of the water from the gravy evaporates.
9. Remove this from the fire and garnish with chopped coriander leaves.
10. Serve this curry hot with Pooris or chapatis.
