Tomato Rice with Potatoes

You will need these ingredients:

Rice - 1/2 cup
Potatoes chopped into tiny cubes - 1/3 cup
Tomato paste - 1 tbsp
Onion - 1 medium sliced thin
Ginger garlic paste - 1 tsp
Garlic paste - 1/2 tsp
Coconut milk - 1/4 cup
Water - 1 cup
Green chilies slit - 4
Curry leaves - 1 sprig chopped.
Tamarind paste - 1/4 tsp
Mustard - 1/2 tsp
Ghee - 1/2 tbsp
Salt - to taste

Method:

1. Wash the rice and soak it in water for about half hour.
2. Dissolve the tamarind paste in the water which we will use to cook the rice.
3. In a pressure cooker, heat the ghee and splutter the mustard seeds.
4. Add the onions and saute until the onions turn translucent.
5. Add in the Green chilies and the curry leaves and saute further until done.
6. Add in the ginger garlic paste and the garlic paste and saute until the raw smell has gone.
7. Add the tomato paste and saute until the ghee separates from the tomato.
8. Add in the potatoes and saute until the potatoes are completely coated with the tomato mixture.
9. Add the rice and saute for again until the rice is blended well into the mixture.
10. Add the Coconut milk, the tamarind water and salt.
11. Mix well. Pressure cook the mixture for three whistles.
12. Open after the cooker has release all the pressure.
13. Serve hot with curd and appalams.
