Mango Yogurt

You will need these ingredients:

Mangoes - 1 to 2 ripe ones
Fresh Yogurt/curd - 1/2 cup
Honey/sugar - According to taste

Method:

1. Cut one of the mangoes into small pieces and keep aside.
2. Blend the other mango in the mixer.
3. To this, add the curd and honey (sugar) and blend until they are combined.
4. Pour the mixture into a bowl and add in the small mango pieces.
5. Cool the mixture in the refrigerator until serving time.

Note:
1. The mangoes have to be sweet. The sweeter the mango, the lesser sugar you will need.
2. Honey is a healthier alternative.
3. Do not freeze the yogurt.

Chocolate Cake with Chocolate Ice cream

You will need these ingredients: 

Chocolate Ice-cream – 750gms (I used Amul) 
All-purpose flour – 1 cup
Baking soda – 1 tsp
Eggs – 2
Sugar – ¼ cup to ½ cup (this has to be adjusted according to the taste of the  ice-cream. If the ice-cream is extremely sweet, there is no need to add sugar) 
Vanilla essence – 1 tsp 
Dark mini Chocolate chips – ¼ cup (optional) 

Method: 
1) Preheat the oven to 220 Deg C. 
2) Pour the ice-cream into a big bowl and melt it completely and set aside until it reaches room temperature. 
3) Add in the eggs and sugar and whip the mixture well until combined and until the sugar dissolves completely. 
4) Add in the baking soda and the flour and mix it well. 
5) Pour in the vanilla essence. 
6) Whip the entire mixture for 5 minutes until combined well.
7) Grease a baking tray and spray some flour on it. (I used a baking tray of 9 inch diameter). 
8) Lightly tap the tray to release the air bubbles. 
9) Sprinkle the chocolate chips on the cake. 
10) Bake the cake in the oven preheated to 220 deg C for 25 to 30 minutes.
11) The cake is baked when a skewer inserted into it comes out clean without the dough on it. 
12) Cool the cake completely before cutting it into slices. 
13) The cake can be served with chocolate or butter icing.

Note:
1) You can also use self-raising flour to make this cake. In this case, you do not have to add baking soda.
2) If the ice cream you are using has eggs, you need not add eggs either.
3) If you do not have mini chocolate chips, you can also use tiny pieces of chocolate. Make sure that the pieces are not too heavy to prevent them from sinking to the bottom.

No Bake Lemon Cheese Cake

You will need these ingredients:

Butter Cookies - 200 gms
Almonds - 1/2 cup
Butter -  1/2 cup
Fresh Lemon Juice - 1/2 cup
Cream Cheese - 360 gms
Condensed milk - 400 gms

Method:

1. Crush the Butter cookies and the almonds together in a blender. The powder must be coarse.
2. Melt the butter and add it little by little to the cookie almond powder until the mixture the reaches the consistency of wet sand.
3. Put this mixture into a spring form pan and press it down firmly until the entire surface of the pan is evenly coated with the mixture. You can use a flat based bowl to do this.
4. Keep this to set in the refrigerator for an hour.
5. Make sure that the Lemon juice does not taste bitter.
6. Beat the cream cheese in a blender to make it soft.
7. Add in the condensed milk and beat this again until it is blended with the cheese.
8. Add the Lemon into this mixture and blend again.
9.  Put the lemon mixture on to the set base and spread it evenly.
10. Put the cake back into the refrigerator and cool it until the mixture is set. This must take about 3 to 4 hours.
11. Once the cake is set, remove it from from the refrigerator.
12. Run a knife along the sidewall of the pan and remove the wall.
12. You can garnish the cake with tiny sprigs of mint leaves or with whipped cream.
13. This cake must be served chilled.

Note:
If you do not have a spring form pan, you can also use individual bowls to serve the cake. The method remains the same, but the assembling can be done as follows:
1. The glass bowls must be chilled before the biscuit base is added into it.
2. Add around 1 to 2 tablespoons of the biscuit base into the glass bowls and press it lightly into the base and chill it.
3. Add around 4 to 5 tablespoons of the lemon filling into the bowl and spread evenly and set this in the refrigerator.
4. Garnish each cheese cake bowl with a tiny dollop of whipped cream and a sprig of mint leaves before serving.

Quick Microwave Chocolate Cake

You will need these ingredients:

Flour - 4 tbsp
Sugar – 4 tbsp
Unsweetened cocoa - 2 tbsp
Egg - 1
Milk - 3 tbsp
Oil – 3 tbsp
chocolate chips – 3 tbsp (optional)
Vanilla essence – 1 to 2 drops

Method:
1. Add all of the dry ingredients to a coffee mug and mix.
2. Add the egg and combine well.
3. Stir in the milk and the oil.
4. Add chocolate chips and splash of vanilla. Stir well.
5. Microwave on high for 3 to 5 minutes. (This totally depends on the microwave you are using)
6. Let it stand for 15 minutes before serving.
